The appropriate specification depends on whether the star anise is intended for whole-spice retail, broth and culinary use, grinding, seasoning production or further processing. A useful inquiry states the preferred whole-fruit percentage, appearance, broken tolerance, sensory target, moisture or testing requirements and intended market. Samples and agreed specifications should be used for final approval instead of relying only on catalogue photographs.
